This is a tapas menu I created for a new tapas bar in Ontario, Canada.

Salads
Chicken Salad “Fitness” - Grilled chicken breast, sliced pears, fresh strawberries, toasted sesame seeds tossed with our gourmet European mix and sesame-ginger Thai dressing. $11.50
Caesar Salad - Fresh crisp romaine, bacon bits and herb croutons tossed with our tangy homemade Caesar dressing. $7
Salade Nicoise - Spring mix, olives, cherry tomatoes, smoked salmon, capers, boiled egg and (optional) anchovies with red wine vinaigrette. $9
House Salad - A fine mix of fresh lettuces, dressed in balsamic vinaigrette and topped with cherry tomatoes and marinated feta cheese cubes. $7

Smoked Salmon Rolls filled with dill Creme Fraiche and topped with fresh sprouts. $10
Satay of Chicken - Chicken breast strips on a stick, served with oriental peanut-butter sauce. $9
Pan-Seared Sea Scallops served on a bed of sauteed spinach and julienne peppers over a grilled Portobelo mushroom. $11
Cheese & Fruit Platter - Fontina cheese, Brie, Aged Cheddar, Smoked Jalapeno Havarti, Baby Gouda, Bread Sticks, Pistachio Nuts, Dried Apricots, Raisins and Fresh Grapes $15.95
Salmon & Sweet Potato Croquettes - Fried until crispy and golden and served with cucumber-dill sauce for dipping. $8.50
Chorizo With White Beans And Chickpeas sprinkled with smoked paprika.
Potato Skins $9 Available two ways, served with sour cream:
Classic - Smoked bacon, scallions, cheddar & mozzarella cheese.
Mediterranean - Artichoke, roasted red peppers, prosciutto, cheddar and mozzarella.
Coconut Shrimp - Four jumbo shrimp breaded in a special coconut breading and fried until golden and crispy. Served with oriental plum sauce. $8
Salmon Enchiladas - Two fresh crepes wrapped around diced salmon and baby spinach cooked in cream sauce and topped with melted Fontina cheese. $11
Thai Style Mussels - Fresh mussels sauteed with cilantro, fresh ginger and a medley of diced vegetables in a light Sauvignon Blanc wine sauce. $9.95
Chicken Quesadillas - Grilled chicken breast, sauteed bell peppers and scallions in a warm tortilla with cheddar and mozzarella cheese. $12
Escargot in Mushroom Cups baked with garlic butter sauce and topped with melted cheddar, mozzarella and asiago cheese. $7
Chicken Wings - One pound of wings fried until perfectly crispy and served with carrot and celery sticks and your choice of sauce, mild, medium or hot. $ 9.75
Camarones Al Ajillo - Fire grilled garlic shrimp served with our fresh summer salsa and rosemary. $8
Taco “Bambas” - Mushroom cups filled with taco beef and baked with sharp aged cheddar on top. Served with sour cream. $7
Chili Con Carne - made with lean ground beef, kidney beans and pearl onions, and topped with sharp aged cheddar cheese. $6.50
Three Cheese Garlic Bread - cheddar, mozzarella and Asiago cheese melted over a French baguette with garlic butter. $7
Tapas Combination $14 per person - 2 potato skins, 2 taco “Bambas”, 2 coconut shrimp and 3 chicken wings.

Fillet Mignon - 6 oz. Tender beef fillet fire-grilled and topped with Herbs de Provence sauce. Served with Chef’s selection of vegetables and potatoes. $24
Caramelized Salmon Fillet Florentine on a bed of roasted red skin potatoes and wilted spinach. $19
Beef or Chicken Fajitas - A sizzling plate of tender beef or chicken sauteed with bell peppers and onions and served with flout tortillas, lettuce, aged cheddar, tomato, sour cream and salsa. $15
Grilled Steak - 10 oz. Ribeye steak grilled the way you like it and topped with Port wine demi-glace sauce. $27
Pollo “Costa Del Sol“ - Tender Chicken Breast sauteed with sliced pears and raisins in a lovely Vermouth sauce. $17
Multicolor Rotini Pasta with chorizo, wild mushrooms, bacon and bell peppers in a light white wine sauce with fresh parsley. $19
